Any fisherman worth his salt will tell you - it's all about the bait. Lucky for you, you're holding the good stuff. An American Blonde Ale, clean and crisp, Cougar Bait is sure to help you with your catch, whatever you may be fishing for. This is a straight-forward Blonde Ale utilizing Aromatic Munich malt for grainy cereal flavor. Fermentation is kept below 68 degrees to produce a cleaner, lager-like ester profile. This is the perfect everyday-drinking beer.

The Shotgun Wedding recipe is based on a traditional English Brown Ale. This flavorful, malt-focused beer has hints of nuttiness, biscuit, and caramel. We age this bse on real vanilla beans to compliment its flavors with the richness and depth of whole Vanilla bean pods. This beer was created serendipitously for a friend’s wedding in the early months of the brewery.

Cliff Jumper IPA is a citrusy, hop-forward IPA. It has a simple grain base under an aromatic hop nose. We brew it using a technique called “Hop Bursting” – using a low amount of bittering hops and high amounts of late-addition hops and dry-hopping. This achieves a hoppy, bitter first impression with a malty finish, making for an easy drinking IPA with a great hop bouquet

This rendition of Classic Pilsner is based off of the original Falls City Pilsner recipe but has been updated for the modern beer drinker.

Hipster Repellant is brewed to celebrate hops. IPAs are a central tenet of the American craft beer scene, and the balance of a nice, malty backbone and pine hop characteristic reminds us of why we started brewing beer in the first place: to stand up and drink good beer.

Falls City’s take on an English pale ale was one of the best sellers of the original brewery. When the brand was resurrected and revamped so too was the original English style pale ale. We have made tweaks to the original recipe for the modern beer drink. This one links our historic past with our present.
